Heat the air fryer to 210°C
In a mixing bowl, stir the soy sauce, mirin,sugar and sherry together until the sugar has dissolved.
Add the partridge pieces, turning to coat. Cover and leave to marinate for at least 1 hour.
Take the partridge pieces out of the marinade and cook in the air fryer for 12 minutes or until cooked, turning frequently.
When cooked, transfer the partridge pieces onto a plate, lightly cover with foil and allow to rest.
Place the remaining marinade into a small saucepan, add the cold water and bring to a simmer. Reduce a little until the marinade has thickened slightly.
Serve the partridge with steamed jasmine rice and some greens (such as stir-fried Pak Choi).
Sprinkle with sesame seeds and spoon over alittle of the sauce.
