Venison steak chimichurri sandwich

Fresh ingredients
- 600 g Venison
- 2 Red chillis
- 1 Red onion
- 4 Ciabatta rolls
- 1 Bag of rocket
- 1 Large bunch of coriander
- 1 Large bunch of parsley
Store cupboard ingredients
- Salt
- Pepper
- 3 Tbs Red wine vinegar
- 6 Tbs Extra virgin olive oil
Marinade the venison in salt, pepper and olive oil.
Chop the coriander, parsley, chillis and red onion to a rough consistency.
Add the red wine vinegar and olive oil and mix together.
Cook the venison on the grill or barbecue to your liking.
Cut the ciabatta in half and toast it on the grill.
Add some rocket to the ciabatta.
Slice the venison and place in the sandwich.
Add lashings of the chimichurri across the top.
