Fresh ingredients

  • 600 g Venison
  • 2 Red chillis
  • 1 Red onion
  • 4 Ciabatta rolls
  • 1 Bag of rocket
  • 1 Large bunch of coriander
  • 1 Large bunch of parsley

Store cupboard ingredients

  • Salt
  • Pepper
  • 3 Tbs Red wine vinegar
  • 6 Tbs Extra virgin olive oil


  • Marinade the venison in salt, pepper and olive oil.
  • Chop the coriander, parsley, chillis and red onion to a rough consistency.
  • Add the red wine vinegar and olive oil and mix together.
  • Cook the venison on the grill or barbecue to your liking.
  • Cut the ciabatta in half and toast it on the grill.
  • Add some rocket to the ciabatta.
  • Slice the venison and place in the sandwich.
  • Add lashings of the chimichurri across the top.
  • Enjoy!
