Kentucky Fried Squirrel
This is a quick and easy dish to introduce you to Squirrel – enjoy
Ingredients
- 4 squirrels quartered
- 2 eggs
- 100 grams plain flour
- 200 grams panko breadcrumbs
- oil for frying
- salt and cajun pepper to season
Instructions
- Season the flour with the salt and Cajun pepper. Toss the meat in the flour, dip in beaten egg and cover in breadcrumbs
- Put enough oil in a pan to allow the meat to float. Heat until the oil is smoking (about 170 degrees C) Place the meat in the pan and cook for about 8 minutes, flip and fry for another 5 mins
- Serve with French Fries and Coleslaw
