Indian pheasant skewers

Another super simple and super tasty pheasant recipe, as we combine traditional Indian flavours with game meat.

Ingredients
  

  • 4 Pheasant breasts, diced
  • 4 tbsp Any Indian masala spice mix
  • A good glug of olive oil
  • 4 tbsp Lime juice
  • Handful of chopped coriander
  • 12 Wooden skewers

Instructions
 

  • Soak your wooden skewers for 10 minutes to prevent burning.
  • Mix all the ingredients, except the coriander, in a bowl and cover with cling film, preferably leave overnight to marinade or a minimum of 30 minutes.
  • Skewer three pheasant pieces on each skewer and allow three skewers per person.
  • Grill for three minutes on each side.
  • Sprinkle with roughly chopped coriander.
  • Serve with salad, on a flatbread or eat as a great snack.
