
Cheeky piri piri pheasant with macho peas
A great midweek dinner dish that you can cook in your air fryer.
Ingredients
Fresh Ingredients
- 1 Oven ready pheasant
- 1 Red pepper
- 3 Red chillies
- 3 Garlic cloves, chopped
- Juice of one lemon
Store Cupboard Ingredients
- 4 Tbsp Olive oil, plus a little for greasing
- 1/2 Tsp Chilli flakes
- 2 Tsp Smoked paprika
- 1 Tsp Caster sugar
- 2 Tsp Dried oregano
- 2 Tbsp Red wine vinegar
- 1/2 Tsp Sea salt flakes
For the Macho Peas
- A good slug of olive oil, for frying
- 1 Red chilli, deseeded & finely chopped
- 300 g Defrosted peas, crushed
- A small handful of flat leaf parsley, leaves chopped
- 8 Fresh basil leaves, chopped
- 10 Fresh mint leaves, chopped
- Sea salt flakes
- Freshly ground black pepper
Instructions
- Heat the air fryer to 190°C
- Halve and deseed the red pepper, brush with a little olive oil and roast in the air fryer, skin side up, for 8-10 minutes until the halves are charred and the skin is coming away from the flesh.
- Once they have cooled, peel the skin off. (Cooking times for the air fryer depends on the model of your air fryer.)
- Deseed the chillies and place in a food processor with all the other ingredients, including the roasted red pepper, and blitz to a paste.
- Put the pheasant in a shallow dish and pour over the marinade, turning the pheasant to coat.
- Cover with cling film and put in the fridge for four hours or overnight, turning at least twice.
- Place the pheasant breast side down in the air fryer and roast for 10 minutes.
- Turn the bird over, spoon any remaining marinade over the pheasant and cook for a further 30 minutes or until thoroughly cooked.
- If the pheasant begins to brown too much, turn the air fryer down to 170°C.
- Once ready, remove the pheasant from the air fryer and leave to rest for 20 minutes.
Macho Peas
- Place a frying pan over a medium heat and add a good slug of olive oil.
- Fry the chilli and add the crushed peas, chopped herbs and season with a little salt and pepper.
- Cook for around 3 minutes stirring well.
Notes
Tip: If you want to make this even simpler, you can use Piri Piri seasoning or marinade.
This recipe also works well with partridge.
