The winners have been announced for the inaugural World Charcuterie Awards 2023, which welcomed entries of more than 400 products from 17 countries across the world.
We were delighted to sponsor the Best Game Product, which was won by Highland Charcuterie and Smoke House for their venison salami with juniper.
To ensure complete fairness and integrity, all judging samples were judged blind and marks were awarded for taste, length of flavour, mouth feel, appearance, tradition or innovation.
The results were revealed earlier today at the Speciality & Fine Food Fair.
Annette Woolcock, Head of Wild Food at BASC, who was on the judging panel said: “We were spoilt for choice when it came to the Best Game product and got to try a lot of fantastic different meats.
“The winning salami from Highland Charcuterie and Smoke House was the unanimous winner on the day but it is so good to see game being used in more innovative ways.
“We hope to see all of those business represented also entering the best added value product or innovation category at the Eat Game Awards too.”
