Loin of Venison with Feta Cheese

A great venison recipe with feta cheese, chorizo and chilli. This is easy to do but will impress.

  • 140 grams venison loin
  • 6 baby chorizo
  • 6 sweet chilli peppers
  • 500 ml orange juice
  • 200 grams feta cheese
  • 1 tsp chilli flakes
  • 2 tbsp green pesto


  • Take the six baby chorizos, cook for a couple of minutes in olive oil in a saucepan. Add the orange juice. Take the sweet chilli peppers and add to the including the juice from the peppers and simmer for 10 minutes allowing it to reduce well.
  • Cut the Feta Cheese into cubes and place on a warm plate, add the pesto.
    Season each side of the Venison with Chilli Flakes, Salt and Pepper.
  • Sear in a very hot pan for 2 minutes each side. Allow the venison to rest for 4 minutes or until the juice has started to run onto the plate
  • Take the sweet chilli peppers and chorizo out of the liquor and arrange on the plate with the feta cheese, add the venison and drizzle with the orange liquor.
