Venison steak chimichurri sandwich

Ingredients
Fresh ingredients
- 600 g Venison
- 2 Red chillis
- 1 Red onion
- 4 Ciabatta rolls
- 1 Bag of rocket
- 1 Large bunch of coriander
- 1 Large bunch of parsley
Store cupboard ingredients
- Salt
- Pepper
- 3 Tbs Red wine vinegar
- 6 Tbs Extra virgin olive oil
Instructions
- Marinade the venison in salt, pepper and olive oil.
- Chop the coriander, parsley, chillis and red onion to a rough consistency.
- Add the red wine vinegar and olive oil and mix together.
- Cook the venison on the grill or barbecue to your liking.
- Cut the ciabatta in half and toast it on the grill.
- Add some rocket to the ciabatta.
- Slice the venison and place in the sandwich.
- Add lashings of the chimichurri across the top.
- Enjoy!
